Pommery & Greno was founded in 1858, but it was Alexandre Pommery’s widow, Louise "Madame" Pommery, who took over in 1860 and transformed it into a serious Champagne house — commissioning 120 Gallo-Roman limestone crayères beneath Reims as temperature-controlled cellars, and in 1874 becoming the first house to commercialize a dry "brut" champagne, breaking decisively from the sweeter style then in fashion.
