Cutwater began as a side project inside Ballast Point Brewing — the brainchild of then-head brewer Yuseff Cherney and founder Jack White. When Constellation Brands bought Ballast Point in 2015, Cutwater split off as its own company (2017), building a 50,000-square-foot distillery on San Diego's Distribution Road. Anheuser-Busch acquired Cutwater in 2019.
