Cutwater began as a side project inside Ballast Point Brewing — the brainchild of then-head brewer Yuseff Cherney and founder Jack White. When Constellation Brands bought Ballast Point in 2015, Cutwater split off as its own company (2017), building a 50,000-square-foot distillery on San Diego's Distribution Road. Anheuser-Busch acquired Cutwater in 2019. Every Cutwater cocktail is made with actual spirits (vodka, rum, gin, tequila, whiskey) distilled in-house, not a flavored malt base — closer to a bar-made cocktail than a hard seltzer.
