Unlike industrial high-volume distilleries that dump hundreds of barrels together to achieve a uniform average taste, small batch distilling is an exercise in meticulous balance and artistic expression.
What Defines a True Small Batch?
There's no strict legal definition of "small batch," but the best examples are blended from a limited, hand-selected number of barrels rather than hundreds. Barrel floor location within a rickhouse matters too — top floors see more heat and extraction, while lower floors age more slowly.
Distilleries that lean into barrel selection tend to describe the process like composing a symphony: each barrel contributes its own character, and blending is where the final profile comes together.
Bottling at Barrel or Cask Strength
Many of the bottlings we carry are released at barrel or cask strength — often 110 proof and up — without dilution. This preserves natural essential oils, lipid compounds, and rich wood sugars that would otherwise be stripped away by chill-filtering or heavy dilution.
How to Taste Cask Proof Whiskey:

- Add 2-3 Drops of Pure Spring Water: This lowers surface tension and releases trapped aromatic bouquet—vanilla blossom, candied orange, and warm leather.
