Nitro beer has grown from a Guinness-specific novelty into a broader craft beer category, and understanding the actual science behind it explains why it feels so different in the glass.

The Core Difference: Nitrogen vs. CO2

Standard beer carbonation uses carbon dioxide, which forms larger, sharper bubbles that dissolve more readily and create a more prominent, often bitter-accentuating bite. Nitrogen forms much smaller, more stable bubbles that create a noticeably smoother, creamier mouthfeel and a denser, longer-lasting foam head.

Why Nitrogen Changes Perceived Flavor

Some brewers have also experimented with nitro IPAs, producing a genuinely different, smoother take on typically sharp, bitter hop character.

How to Experience Nitro Beer Properly

For the full effect, nitro beer is best experienced from a proper nitro tap (most authentic) or a can/bottle with a dedicated internal widget — pouring a standard CO2-carbonated beer into a nitro-style glass won't replicate the actual gas difference driving the smoother texture.
